2nd Anniversary Dinner with Oven Roasted Potatoes


Today is our second anniversary. To celebrate we met up for a lunch out together and tonight we are going to have a quiet meal at home. Per the plan, tonight we were supposed to be having salmon, broccoli and rice pilaf. In reality we had grilled salmon, steamed broccoli and oven roasted potatoes. We also finished up the salad from a couple of nights ago but changed it up by adding some sliced grapes.

In my opinion the potatoes were the best part of the meal. Not only because I love potatoes but because they were just perfectly roasted. Not too hard on the outside and beautifully soft on the inside. To make them I diced up some red potatoes, yukon gold potatoes and sweet potatoes. I drizzle them with olive oil and some freshly cracked black pepper and then roasted the in a 350F oven for probably an hour and a half or two hours. Basically you throw them in the oven when you get home from work and by the time you get around to making the rest of dinner they are ready to go.
