Mom's Berry Frozen Yogurt

This recipe was passed on to me by my mother. I'm not sure where she got it from but I do know that it tastes delicious. A nice little break from the Ben and Jerry's heavy whipping cream and whole milk ice cream I have been making as of late.

Ingredients
  • 1 1/4 cups sugar
  • 1 cup water
  • 3 cups fresh raspberries, blackberries or strawberries
  • 24 oz vanilla yogurt
  • 1 tsp vanilla
  • Fresh melon or other fruit, cut into thin ribbon slices with veg.peeler (optional)

In medium saucepan over high heat combine sugar and water. Stirring constantly, cook until mixture comes to a boil and sugar dissolves. Remove from heat and cool.

In a blender combine half of the sugar mixture and half of the berries. Cover and blend until almost smooth. Pour into fine mesh sieve over a bowl. Repeat with remaining sugar mixture and berries. Press berry mixture through sieve and discard seeds. Transfer berry mixture to large mixing bowl and stir in yogurt and vanilla. Mix well, cover and chill several hours or overnight.

Freeze in a 2 quart ice cream maker per manufacturers instructions. Allow to harden in the freezer for 4 hours. Serve scoops decorated with melon strips. Makes 6 to 8 servings

298 cal per serv, 2gm total fat (1gm sat), 6mg chol, 67mg sodium, 67gm carb, 3gm fiber, and 5gm protein.
