After bugging my friend over at Damn Delicious about the fact that she hasn't posted since December I felt that I would avoid the backlash by posting something myself.
I made this omelet a few weeks ago (don't worry I ate it promptly) as a way to jumpstart the morning and clean out the fridge. Plus I had just spent the week telling patient after patient that they needed to include more vegetables in their diet and that it was easy and quick to do so. **Word to the wise- be careful what you preach because, if you are like me, you end up forcing yourself to practice it as well. How else are my patients going to believe me?!**
There isn't really a "recipe" for this but basically I sauteed diced vegetables (broccoli, carrots, and shallots) in a little bit of salad dressing over medium heat until soft and then placed them inside a two egg, one egg yolk omelet.
Easy to make, a great way to increase your vegetable intake and delicious to consume on a sunday morning. How are you going to add vegetables to your day?

I ate zucchini and tomato scrambled eggs yesterday - that's a good start, eh? Also, my chocolate chip cookies turned out good, but I'm not sure they're blog good! What to do now?!
