On the menu tonight:
- roast sweet potatoes
- oven grilled yellow squash
- asparagus
- grilled chicken
Nothing too fancy but a perfect mix of starch, vegetables and lean protein. I'm still impressed that I can fill Marc's plate up with vegetables and he barely notices that there is no bread or pasta on it. It works especially well when you add sweet potatoes because that seems to be one of his favorite starchy vegetables.
