Spicy Honey Chicken

Tonight we decided to try a new recipe from one of my new favorite blogs, Our Best Bites. I was looking for something relatively easy to do with chicken and decided to try out there Spicy Honey Chicken. We paired it with steamed rice and grilled zucchini. Next time we'll probably keep the rice but try a different vegetable just to mix it up.



Spicy Honey Chicken
  • 2 tsp olive oil
  • 2 chicken breasts
  • 1 tsp garlic powder
  • 2 tsp chili powder (I might opt for a little less next time)
  • 1/2 tsp onion powder
  • 1/2 tsp coriander
  • 1 tsp salt
  • 1 tsp cumin
  • 1/2 tsp ground cayenne pepper (or chipotle chili powder if you're into that kind of thing)
  • 1/2 cup honey
  • 2 tbsp cider vinegar

Combine garlic powder through cayenne pepper in a small glass or prep bowl and set aside. Rinse chicken breasts and pat dry. Coat with a thin layer of olive oil. Sprinkle rub over the top of the chicken, flip and repeat. Pour the honey into a small bowl and heat in the microwave, 20-30 seconds. Add the cider vinegar to the honey and mix well.

Grill chicken and baste with honey/cider mixture. Grill until cooked through, flipping at least once. Enjoy!
