Grilled Salmon and Vegetables

After spending a day at Legoland and gorging on all things unhealthy we decided tonight we would try a healthy meal at home. On the menu was:
  • Salad: arugula, tomatoes, onion, with a simple vinegar and oil dressing
  • Grilled vegetables: yellow squash, zucchini, asparagus and corn
  • Grilled salmon with a little bit of Trader Joe's Soyaki

One of our favorite ways to grill vegetables is to dice them up, sprinkle them with freshly cracked pepper and a drizzle of olive oil then wrap them up in a foil packet. Throw them on the grill for 10 minutes and enjoy!
