Skillet Scramble

The best way to use up leftover ingredients when you have a little extra time in the morning is to throw them all in the skillet. You could even add some shredded cheese over the top if you desire. Adjust amounts based on the number of people you plan to serve.
Ingredients
  • onion, diced
  • bacon, cut into 1/2 inch strips
  • potatoes, cubed
  • eggs

Heat skillet over medium heat. Add onion, bacon, and potatoes to skillet. Cook until browned, stirring occasionally. Remove onion, bacon and potatoes from skillet and cook eggs in skillet. Place on top of potato mixture and enjoy.

Duke always puts diced apples in his scrambles. It is really good. Try it some time.
