Mushroom Risotto

"I like to cook with wine. Sometimes I even put it in the food."


New Year's Eve I was treated to an absolutely delicious risotto at a friend's house. It was creamy, rich, and flavorful, something I would never be able to recreate given my tendency toward baked items not entrees. However, tonight I decided I would attempt the impossible. It seems as though the mid-winter blahs have taken over some time during the past week. Sunny days with bone-chilling winds and a cold/flu being passed around all my co-workers have left me completely drained. Nothing better to give me the energy to get out of this then risotto and a glass of wine.

Mushroom Risotto
  • 1 1/2 cup Arborio Rice
  • 1 tbsp butter
  • 1/2 onion, diced
  • 8 oz sliced mushrooms
  • 1/2 cup dry white wine
  • 4 cups heated stock
  • parmesan
  • 1/8 cup cream
In a medium sized heavy bottom frying pan, saute onion and mushrooms until tender. Add the rice and stir until well coated and translucent.

Add wine and cook until evaporated. Stir in one cup of stock and simmer until absorbed, stirring occasionally. Continue to add stock, little by little, until rice is tender. Stir in cream and cheese, let rest 2 minutes before serving. Enjoy!



Below is a second recipe for Risotto courtesy of my Dad. The benefit of this recipe is you can make a base risotto to freeze and then use later however you please.

Base Risotto by Neil

Serves 4-6
  • 1.5 liters or 2 ¾ pints chicken or vegetable stock
  • 2 shallots, peeled and chopped
  • 2 tablespoons olive oil
  • 15 grams or ½ oz unsalted butter
  • 400 grams or 14oz good risotto rice (Italian risotto rice – Arborio, Carnaroli or Vialone Nano)
In a saucepan, heat the stock until it is simmering steadily. In a large frying pan, sauté the shallots in the oil and butter until soft. Add the rice and stir for a few minutes, until all the grains are warmed through.

Add the hot stock, one cup at a time, allowing the rice to soak up all the liquid before you add another cupful. Continue adding the stock until the rice is cooked but not mushy.

You can serve it as a simple risotto – add 25 grams grated Parmesan cheese and 15grams unsalted butter, and season to taste with freshly ground black pepper – or divide it into portions as it is and freeze.

Eclipse or Snow?

Before going to bed last night I was told that tonight there would be a lunar eclipse. Staring out the window looking for the moon brought back a flood of memories

. . . As a kid, standing in the neighbor's yard watching the stars through their telescope and trying not to move the camera that was taping the eclipse. As a teen, watching the stars from my sleeping bag next to the lake in the mountains during a backpack trip at camp. And just a few years ago, in LA going to the observatory in my neighborhood to join the local astronomers in their open telescope night. . .

Then this afternoon on my walk back to work from lunch, a small snowflake landed on my nose, and suddenly I was conflicted. Did I want the snow to continue so I could enjoy feeling it land on my eyelashes and admire it's beauty as it dusted my neighborhood? Or did I want the snow to stop so the clouds would clear out and tonight I could watch the lunar eclipse?

Your Valentine's Day Fortune

I have to say that I love fortune cookies. I love the sound the cookie makes as you crack it in half and the soft scraping noise as you slide the fortune out. I love the anticipation as you smooth out the piece of paper to see what your fortune holds. And mostly, I love the fact that there's just a little bit of fate in there. You could pick up any of the fortune cookies but no you chose that one and this is fortune it holds for you.

My second favorite are the dove chocolates, rich dark chocolates to be exact. Not only is the heart shaped chocolate delicious but inside the wrapper is a little saying not too far from the chinese fortune cookie. Today in the mail I received a package from my favorite Valentine so tonight I decided to open just one of the chocolates before I head off to my Valentine's Day dinner. And what did it say . . .

The best things in life are chocolate.


I guess it's not looking good for dinner. And then I decided, who are we kidding, I should have one more. It's words of wisdom . . .

Chocolate. Always your Valentine.


Which got me wondering, is this the bag marketed especially for singles, to cheer them up on Valentine's Day? To which the next chocolate said . . .

Chocolate always loves you back.


I better stop now before I finish the bag and ruin my dinner. Happy Valentine's Day!

Laundry

One of the down sides to my apartment complex is that the washing machines and dryers are in the building next door. I specifically remember thinking to myself, not such a big deal now while it's summer but I bet in the winter it will be interesting.

Current Temperature: 30F feels like 22F - Light Freezing Rain
Loads of Laundry to do: Four
Location of Machines: down the front steps (covered in ice) around the corner of the building (not icy but it's raining) and down another set of stairs (partly icy) into the next building's basement
Assessment of fingers: painfully cold and bright red (I'm wearing gloves next time)

Be the Change

One of my morning rituals is to listen to the radio for the weather forecast. That way, before I get out of bed, I know exactly what I am facing for the day. This morning I woke up and heard that it was 16F with a windchill that made it feel like 3F. Brrrrr!!

Instead of cuddling under the blankets and refusing to face the day, I decided to bundle myself up and walk to work. That's right I walked to work. One of the hazards of my job is the responsibility I feel that I have to practice what I preach. If I tell my patients that they have coats and should just bundle up and still walk around outside when it's cold, then I should too.

So at 8am this morning wearing two sweaters, a wool scarf, hat, gloves, and a coat with a hood, I walked to work. And honestly, with the sun shining it wasn't that bad. It was actually quite enjoyable. Now, midday, it's currently 26F (feels like 14F) and the wind's beginning to pick up. Luckily I am done with my walking for the day.

The Season of Lent

I'm not Catholic but attending a Catholic high school has left me with certain traditions. One of which is Lent. For me, it's an opportunity to break old habits and give up something for 40 days.

This past month, my father and I gave up alcohol. Although admittedly, he did better than me. I had a weekend of wine tasting and a couple of drinks during dates but on the whole I was able to stick to my only one drink a night rule (excluding the aforementioned weekend).

So this month, with the beginning of lent, I have decided I am going to give up eating away from the dining room table. For example I will no longer be eating in front of my computer, while standing in the kitchen, or at my desk at work. The only place where food is allowed to be consumed in my apartment will be at my dining room table. We'll see how that goes as it gets mighty boring eating by yourself at a table set for one.

Super Tuesday

So as not to show favoritism to one side or the other here's another piece of information I just received from one of my colleagues:

"It was great to see Obama mention RDs and preventative medicine. Mike Huckabee for the Republican ticket not only also mentioned preventative medicine (the same stat regarding amputations), but he wrote a book about weight loss (Quit Digging Your Grave with a Knife and Fork: A 12-Step Program to End Bad Habits and Begin a Healthy Lifestyle)."

Exciting Yet Productive

Today has been quite an exciting and productive day at the Adventurous Twenty-Something household. Here are the highlights:
  • I cleaned the apartment top to bottom
  • I submitted my learning plan for my professional development portfolio
  • I went for an afternoon walk along the Potomac and got to watch the planes taking off
  • I had a visit from the friendly Alexandria Police
  • I booked two plane tickets to CA
  • I watched the superbowl and the fun commercials like the one with the talking stain (did you see it?)

Good News for my Profession

**This is not an endorsement for any candidate in the running for the 2008 presidential election. I simply wanted to point out that the effectiveness of prevention for health care is finally being recognized. Now if only "health care" insurance companies could see this too.**


"So I've already said a sizeable portion of my health care plan will be paid for because we emphasize savings. We invest in prevention. So that as I said before, the chronically ill that account for 20 percent -- or the 20 percent of chronically ill patients that account for 80 percent of the costs, that they're getting better treatment. We are actually paying for a dietitian for people to lose weight as opposed to paying for the $30,000 foot amputation. That will save us money."
